A celebration of tradition and at the same time a hymn to experimentation. The new cocktail list of Café Concerto Paszkowski pays homage to the great classics of mixing in continuous play between past and future.

Born from the creativity and passion of the bartender team led by Luca Manni, the twelve evolutions presented in the new menu, enhance the original recipes of the great classics. Which were selected through a personal reinterpretation of the venue and the most modern preparation techniques, such as the creation of cordials and velvets, or the use of curdling and sous vide cooking.

“The proposal of the cocktail bar of Café Concerto Paszkowski evolves with particular attention both to the most unusual combinations and to the approach of very well-known flavours, but which are not normally combined" states
bar manager Luca Manni. This is the case of Wasabana Bliss, a cocktail to the rebellious soul that plays with the sweet-spicy contrast and identifies itself as a true gastronomic drink. It is more minimal, however El Mexicano, with a essential garnish and smoky flavour, made soft and slightly creamy from yogurt to vanilla. There is no shortage of proposals for lovers of savory shades, such as PZKOOL Martini in which watermelon is infused by osmosis into the olive brine.

To close, of course, the great classic of Florentine mixing, rethought at Café Concerto Paszkowski as Negroni, what a passion! A cocktail designed to bring the Negroni closer to every type of palate, thanks to the soft tones of the passion fruit cordial, balanced with the choice of dry red vermouth and a bitter dedicated to Florence.

THE PASZKOWSKI CONCERT COFFEE

Born between the end of the 19th century and the beginning of the 20th century as Central Café, in 1903 it immediately became a point of reference for the city and also for the intellectuals of the time.

Having become a brewery and refreshment point, it takes the name Paszkowski itself to become the Brand Ambassador of that Paszkowski Beer, which gained prominence at a national level until the 1930s. At the end of the nineteenth century, Paszkowski became a literary café where Prezzolini, Soffici, Papini and D'Annunzio, subsequently Montale, Saba and finally Pratolini, were among the most illustrious regular customers. In 1979, the Caffè was purchased by the Valenza family, still the owners today, who decided to relaunch not only the café, but also the catering and mixing, without ever forgetting the tradition of Caffè Concerto.
In 1991 the Café Concerto PaszkowskIt is declared a Cultural and Environmental Asset and becomes part of the Historic Places of Italy.

In compliance with the constraints dictated by the Superintendency of Fine Arts, the Caffe Concerto Paszkowski, in 2020, is renewed. The project involved both the spaces dedicated to customers, as well as the laboratories and production and service areas. The new" Coffee
