CESAR ARAUJO

35 years old, he takes his first big step behind the bar counter at Rotonda Bistrot, in Milan, where he began to experiment with a certain type of mixing based on a low alcohol, school proposal Diego Ferrari, with liqueurs, bitters, vermouth strictly under 21°. Subsequently he arrives at The Doping Club, where he has the opportunity to deepen with further growth. His journey continues to The Botanical Club, one of the places dedicated to gin in Milan, with more than two hundred bottles of gin and a still for distillation inside, true pioneers of micro-distilleries. Today, Cesar Araujo is the bar manager of Bob Milano (put link), a fresh and constantly growing reality, with strong influences for everything related to American style mixing, the spirits that reign supreme are Bourbon and American Whisky. Caesar's favorite spirit? Needless to say, Bourbon; while, depending on the context, he likes to sip a Milano Torino, an Old Fashioned or a Martini cocktail.

PAST DRINK LISTS: SOME CURIOSITIES

Bob Milano has always stood out for his artistic and refined proposals. One of the first drink lists was based on the concept of migration and integration of various cultures within others. Following the first lockdown, they returned with a menu focused on the word empathy. Colors, drink suggestions, photos, communication... each element sought contact with the customer, in some way we wanted to pay homage to him for the support received during the three years of Bob's activity.

“HOUSE OF COCKTAIL”, BOB MILANO'S NEW DRINK LIST

Cosmos – Vodka Russian Standard Platinum – Pomegranate Cordial – Alta Langa Pas Dosè 36 months Gancia

Designed by Bob's bar manager Cesar Araujo, “House of Cocktails” represents a journey of twelve new signature cocktails inspired by the world of design and gaming, in particular by the work of the most famous designer couple in the world: Charles And Ray Eames. It was they who invented the famous board game “House of Cards” in the 1950s. The menu was conceived by Cesar Araujo just like in the "House of Cards" game: each page of the menu graphically represents the mood that inspired the drink recipe.“With this drink list I want to help our customers immerse themselves in an atmosphere of play and creativity” says Cesar Araujo. “By playing with my daughter, my mind began to weave a common thread of new flavor combinations linked to the playful sensations of childhood that I wanted to translate into a game menu. The coaster also becomes a real toy as happens with the cards from the famous "House of Cards" which inspired me. The invitation is to instinctively play with the flavors of the cocktails and the cards, imagining a personal aesthetic reality".

Lullaby – Mitcher's Rye Whiskey – Red Vermouth on toast

With the new drink list Cesar Araujo invites his customers to be guided by their personal instinctive and aesthetic taste to play with a reality made of drinks with well-defined flavours, often delicate, elegant but expertly structured. At the center of Bob's new research is a great attention also to technique and innovation. The Bob team's know-how has in fact been enriched over time where the last two years have represented an opportunity for in-depth study on new raw materials, new machinery and new 360° recipes (shrub and cordials, homemade fermented drinks, prebach preparations, but also the creation of high quality crystalline ice).

Ace – Wild Turkey Rye – Campari – Cinzano Vermouth Bianco – Orange and carrot (Milk Punch)

Vèz – Vecchia Romagna 3 barrels – Select – Antico Rosso – Amaro Montenegro – Mango and Ginger
